Here is a breakdown of what is happening during the day/evening of the nationals.

Bummed I am only going to be able to attend the Thursday night race this year, in past the racing has been tremendous and Jackson is small/quiet town but does have some nice things to offer.
1. Bring a bike, local trails are very good.
2. Challenging 9 hole golf course
3. Limited dining options but Kat's Hog Heaven is phenomonal (breaded pork tenderloin). Pillars, Bridget's are tasty as well. Pizza Ranch buffet or fast food (BK, DQ and Subway). As mentioned above, Bergen Bar is 10 minutes north. I went once, super busy and not a big place. But, having a cold one on the patio and waving at cattle was "unique".
4. If you like to fish, there are numerous lakes within 15 minutes
5. Lakefield is about 10 minutes west and has a bowling alley and an awesome bakery. Also, there is/was a cool trap shooting place on the way. Horse Hunt club or something like that.
6. True small-town downtown (1-way street) with local shops (clothing, antiques, etc)
7. Arnold's Park/Okoboji IA is about 25 minutes SW of Jackson. Take in a day of amusement parks, lakes and a lot of restaurants.
